When it comes to the thickness of the stainless steel sinks, the lower the number, the thicker the gauge steel. In most stores you'll see gauge ranges from 18 ga.-23 ga.

 

8" is a standard bowl depth. Usually with a thinner gauge stainless in thickness, you'll also have a shallower bowl, such as 6"-7" deep. Personally, I wouldn't go any thinner than a 20 ga. stainless steel sink. Anything thinner than this is just way too thin for normal kitchen use.

 

When it comes to cast iron sinks, how thick the enamel is on the cast iron is usually a good indicator of quality.

 

Some sinks are sold as DUAL MOUNT, which means that they can be dropped in, or undermounted to the countertop.
